SWEET AND SPICY MARINADE GOODNESS!
This recipe is sure to please those who think all chicken dishes are bland. The marinade has just enough kick to make your taste buds come alive. Plus, the rich texture of black beans is complemented by the sweetness of the mango, which of course is a prebiotic. With this dish, you help restore gut balance without losing flavor.
1-1.5 pounds boneless, skinless chicken breasts
3 cloves garlic, minced
1 teaspoon ground cumin
1/2 teaspoon oregano
1/2 cup lime juice
salt and pepper to taste
1 can black beans, rinsed and drained
1 ripe mango, peeled, seeded and diced
1/4 cup chopped red onion
1/4 cup chopped fresh cilantro
salt to taste
3 tablespoons lime juice
1 tablespoons extra-virgin olive oil
Wash and dry the chicken breasts. Combine the ingredients for the marinade in a gallon-sized plastic bag. combine the chicken and marinade in the plastic bag to marinate for 1-12 hours
Preheat the grill or broiler to high. Drain the chicken breasts, reserving a little marinade. Transfer the breasts to a cutting board and thinly slice across the grain. Mound the salsa onto plates or a platter. Arrange the chicken slices on and around the salsa and serve.
